Wrestling is a passive defensive combat skill; comparable to Swordsmanship, Macefighting, and Fencing
Usage
Wrestling is a passive skill that determines the accuracy of attacks made against you from close range. Higher values of skill will not make you more likely to hit your opponent, simply to defend yourself from their attacks. Wrestling defense is applied as long as you aren't holding a Weapon.
Along with Tactics, A wrestling skill of 42.5 enables Disarm. With an 87.5 Wrestling skill, you can use Paralyzing Blow.
Formula
Like all Weapon Skills, Wrestling creates a chance for your attacker to miss an attack at close range, in this case while you aren't using a close range weapon.

Unarmed Strikes deal a base damage of 4-8 damage per hit, increasing by +1 for every 28 of the attacker's strength. For characters holding something other than a melee weapon in one hand, that bonus decreases to +1/48 strength.
Differences from Ultima Online
In the original Ultima Online, combat skills like Wrestling determined hit rate and swing speed.
